DreamChasers – Charlotte Blog Describes The Brewery
Popular online newsletter CharlotteFive.com describes Neil Gimon as ‘no stranger to adversity‘.
In a recently published article on the blog/newsletter, Charlotte Five journalist Daniel Hartis sets up the story about the Gimon’s five year journey to fulfill their vision of opening the DreamChasers Brewery, a Waxhaw brewery recently gaining Charlotte Attention. From financial obstacles to health issues, Neil and Anita trudged forward with the dream, now fulfilled in the form of a beautiful tap room, 20-something miles south of the Queen City in a town where having a local microbrewery has been anticipated for years. Neil and Anita, dedicated to bringing a unique and special place to hang out in Waxhaw, are excited to open the doors in spring of 2016.
Located at 115 E. North Main St., DreamChasers is just steps away from the landmark Waxhaw Overhead Bridge, where children and adults flock to watch the train roar under it, and to gaze down the tracks during the quiet times. So enough about good old Waxhaw, what about the new stuff the Gimons are bringing to this community? Along with a neat new hangout – one that will introduce the cultural experience of micro-brewing and beer tasting to the Waxhaw sector, let’s talk about the beers they’ll make, and how they learned their craft. In his Charlotte Five article, Hartis writes:
Many of the beers will be based off of recipes that Neil brewed during his 20 years as a homebrewer. Scaling those recipes up will be Skyler Lachenmayr, the head brewer at The Dreamchaser’s Brewery. Lachenmayr graduated from the Niagara College Teaching Brewery and interned at a brewery in St. Louis (Lachenmayr and his wife moved to Waxhaw from southern Illinois).
At the Grand Opening of DreamChasers, the Gimons will serve the following five brews:
– Another Ale in My Coffin, a pale ale
– Stout! Stout! Let it All Out, a dry Irish stout
– Footbridge IPA, based off of one of Lachenmayr’s award-winning recipes
– Red Rider IPA, a honey red IPA
– The Booty Brew, a honey wheat pilsner
